Alright, cutting the VBUS cable (red) did make it possible to use the USB A to C cable for gadget mode, great!
Unfortunately, there are some follow-up issues:
I want to switch between gadget and host mode, ideally using the same cable.
On the pi I'm running:Unfortunately, the cable without VBUS somehow won't allow the pi to be the host. How could I resolve this?

But somehow the gadget connection gets lost when I plug the multiplexer between the pi (in gadget mode) and my laptop (the host).. The multiplexer allows passing through a host connection from the pi side - so it is functional.
