How do I get a boot log?

As I said above:
Those are boot log messages. The last ones seen should give some idea what the problem is. You might find it easier to read them (as they'll stay on screen) over thePi5's debug UART but you'll need either another Pi or a USB to 3.3v TTL adapter and the appropriate cable. I[f] you don't have either get the RPL debug probe.

You should also be able to get those by mounting your SD card on another Linux box and looking in /var/log.

Without the log messages we're all just guessing and that's clearly getting us nowhere.
As I said above, I was able to grab the contents of /var/log, but I don't know what to look at or what to share.

I guess I was too harsh. Sorry.

For the actual messages shown on screen during boot you'll need to go the serial route above.

Related messages can be extracted from the systemd journal but that's going to need access to a working Linux box (or WSL under windows).
Assuming you have the requisite journal directory from the recovered /var/log in $HOME the following should get you started:

jounralctl -D $HOME/journal --list--bootsjournalctl -D $HOME/journal --boot=n
Where n is the number from the first column of the output from the first command.
