Networking and servers • Use a pi zero as gateway/translator to internet for old hardware

I have been fancying the idea to connect old computer that have a modem, to the internet, to browse BBS or early websites. I got to try something called "DreamPI", which does some magic and let you call a fake number with fake credentials to connect your dreamcast as if it was on a dialup connection. This works pretty easily with a phone cable connecting the pi to the dreamcast, and in the middle you apply a voltage to fake the answer singal you would get on a real phone call. No tweaking of VOIP devices or configurations, just a straight cable with a 9V battery and a resistor.

I tried to use it with an old Windows XP computer via modem and it does work there too, but it seems to be limited to HTTP traffic. For example if you open mirc or another service that does not use a web browser, the system does not seem to work.

Is there a project or guide that show how to configure a RPI zero 2W to basically be connected to a 56K usb modem like the Dreampi does, but with configurable settings so it acts like a ISP to access different internet services?

The objective here is not to connect to internet just for web browsing, but also to simulate things like BBS calls (many BBS still operates using regular broadband connections) and to use devices that are so old that have no concept of what modern internet is, to use mailing lists and such.
From what I read I have most of it set up, as I have a cable that simulate the phone line, and the Pi is getting the phone calls on the "fake" number, but I probably need a PBX server (Asterisk?) and probably something else to run Mirc and BBSes? This is all new so I am trying to figure this out instead of just use things without understanding what is going on.
