Almost no-one outside the UK has RP2350 boards yet, unless you're associated with a reseller or hardware company. You've raised an issue at Thonny's github site : good.Thonny v 4.1.4 does not recognise PR2350 boards when they are plugged into the USB port. I hope an update will be available soon as novice users will find this off-putting.
MicroPython (generic) is always an option for using the board. And the auto detection sometimes doesn't work, so you have to use generic.
There is a uf2 for the Pico 2, but there's not a full release yet, only nightlies. The next release-1.24.0 Milestone is a little way off, judging from the number of open issues. This always happens when a board is created between releases: you have to wait
