Just a note to say "Thank you" for taking the time to come back and post this. This helped me when I was attempting to deal with the "Taskbar shows up ~30% on screen instead of being completely hidden" issue. Would be nice to have the Task Bar be optional, but this gets the job done for now. Thank you....you can just disable it 'definitely' by stopping wayfire from running wf-panel-pi on start up.
You can do that by editing the file "/etc/wayfire/defaults.ini" and comment the line which says "autostart0 = wfrespawn wf-panel-pi".
