I currently use old ADSL routers as cheap WiFi repeaters to extend my WiFi around my home and into my garden.
All I do is turn off the DHCP server and ADSL access stuff then connect it to my primary router via Ethernet cable. This also gives me more and free Ethernet cable distribution points which also helps.
Agreed, this'll only work if your ISP doesn't want its old kit back but you could just go silent until you've transferred over to the new router in slow time. Maybe take your time if they don't demand their kit back.
Edit: it occurs to add that if you can keep your old router it'll insulate you from events like your new router packing up. Maybe consider getting an old router, used as above, to insulate your Pi network stuff.
