If I remember correctly, the 1024x768 resolution comes from a hardcoded list of fallback modes in the linux kernel.
If you force mode setting in the kernel via video=, the hdmi port will be forced on and no detection takes place, and you won't get the EDID from the monitor, so you just have the fallback resolutions.
In short, you shouldn't force mode setting.
