I already know about the chromium commands you mentioned and entered them in fullpageos.txt but it does not work.I don't know if you can edit/add commandline switches for starting chromium in fullpageos.txt, but it looks like you you can add them to to ones already in /etc/chromium-browser/customizations/00-rpi-vars.
Here's what I am trying to achieve:-
I have a 13 -inch touch display to control my smart home dashboard connected to the Rpi and tried RPI OS with chromium opening in kiosk mode with the required zoom settings, hidden info bars & scroll bar,etc with a custom startup file.
But I could not use my finger to click-and-drag on the screen to scroll the page as the only way to scroll was the scrollbar (Can interact with devices on the dashboard using touch.That's why I switched to FullPage OS in which I can scroll the page using touch but dont know where to edit chromium commands.
