Every product is a single-board computer these days.What brands and products can I expect to have single board computers, so I can potentially save a few dollars from just buying the board itself? It doesn't have to be a raspberry pi.
Buy some and report your findings. Although, please try to do better than "a while back I bought a home cloud system for security cameras or something (I forgot the company name)".
However, what you save from "just buying the board itself" will be eaten up by the time taken to get it working as you want. The strength of the Raspberry Pi ecosystem is the Raspberry Pi OS, which extracts the most, and most consistent, performance from the Raspberry Pi hardware. Plus, discussing it in these forums means it pretty much does have to be a Raspberry Pi.
