I don't know anything about pihole...have never run it due to it being rather cumbersome and many people seem to have issues with it.
That said, since pihole is just a DNS (and maybe DHCP) server, I can't imagine why it would care what time server you provide, as long as you provide one that works.
I would suggest finding out what pihole uses that time server for, if you care.
Is there any reason that you can't simply...try it?
