We do test as many devices as possible on kernel and OS bumps, but this one obviously didn't happen for some reason. I2C changes probably weren't expected in this kernel bump, and actually it was the defconfig change that caused the issue. The overlay was wrong in trying to enable the kernel driver for the humidity sensor anyway, it just happened to work in the past.
For reference, when a new apt release comes out, it should just overwrite the kernel from rpi-update, so you shouldn't need to worry about unrolling anything.
