Sounds very much like you have MISO/MOSI crossed over - the one you are calling MOSI clearly has both devices driving it (should only be the master), and the one you are calling MISO seems to have neither (should be the slave).
Note that the RP2040 documentation does NOT call them MISO/MOSI, it calls them SPI0_TX/SPI0_RX and the direction does not change depending on the mode (master/slave) - SPI0_TX is always an output. So very likely you have mis-identified the pins.
