Suggest using BMP585 to Accurately measure the changing pressure profile at the various elevations as tracked by the GPS. Given the altitude range your are expecting, pressure sensors should not be the primary way to measure altitude as the formula to calculate altitude is non-linear over this range.
For the 1-wire temp sensor, I'd suggest you look at the Temp-1Wire Pt100 Frost" which is extremely cold (cryo) temperatures from -200 °C to +160 °C. the DS18B20 (and other sensors) get less accurate at the edges of their range.
