If it happens again I'd try rebooting the Pi 4 first to see if that fixes it.
It does, if I remember correctly that's how it went down last time. I had rebooted the pi5 several times (but without changing the kernel to kernel8, which is what I've done differently this time) and the issue had resumed upon each reboot. Then rebooting the pi4 once stopped it, without having to reboot the pi5 again after that.
Though I thought it unlikely before, I now think it likely the Pi 4 suddenly starts issuing a huge number of malformed NFS requests to the Pi 5 and that slows it down enough to be unusable. I wouldn't have thought errant NFS packets could reduce the quality of service to such an extent, but who knows.

Hopefully the problem is solved. If it isn't, I'd start looking at the Pi 4 more closely.
