If you already have the hardware, why not just load it up with your Priority tasks and ensure it runs. Then add the less important tasks one at a time to find out when it breaks...
The Raspberry Pi is a 8gb.
If you take sensible precautions when handling the board you are unlikely to cause fatal damage to it by experimenting with workloads.
I have the hardware and I tried what you suggested. I think I damaged one of my pi's
