For reading email, you will not see any difference between Bullseye and Bookworm. The main difference I found is the use of Network Manager for network configuration, a real pain as there is no working documentation for doing anything outside of connecting to a network.

The other change is the replacement of X11 with something that is supposed to be faster but, after years of development, still will not let me set up VNC the way I use it with X11. During setup of Bookworm, you can request X11 instead of Wayland, which sort of puts you back to Bullseye. Wayland is supposed to be faster for some graphics plus the Pi 5 GPU makes the Pi 5 faster for some graphics. No difference just sitting there reading or typing email.

Thunderbird should work on both except for graphics. Depending on how the graphics are performed, it may or may not be compatible with Wayland. What else do you use?
